A Low Key Day

Howdy there! How are you doing today?

Today was relatively low-key … no gym, just a trip to United for some supplies for our ranch trip tomorrow (I hope to take lots of pics and share them!). Luke and I were both tired today, so we took a rest day. 🙂

Breakfast

Again with the eggs, homemade enchilada sauce, and chilies! I upped my protein game with this breakfast and added bacon and turkey sausage. Talk about delicious!

Lunch

I had chicken breast with BBQ sauce and roasted Brussels sprouts, carrots, and broccoli with jalapeno ranch drizzled on top … easy peasy lunch.

Snack

I drank a kombucha and ate an opal apple with Tajin Seasoning as a snack.

I also had a few jelly beans, just because they enticed me at the store and it’s Easter time, so why not?

Dinner

I roasted a spaghetti squash with S+P and EVOO and scraped one half out for dinner – I added spaghetti sauce, hot Boar’s Head turkey breast, and some roasted broccoli and tomatoes with some Parmesan cheese. YUM! Delicious and totally filling.
